Asian Shrimp Noodles

I could probably eat pasta every single day!!!  I love having pasta mixed with flavors besides traditional Italian ones.

This dish is such a great combination of flavors and the fact that it can be eaten cold makes it perfect for summer!!!

Asian Shrimp NoodlesIngredients:
Angel hair pasta – cooked
1/3 c vegetable oil
1/3 c honey
2 T rice vinegar
2 T sesame oil (this ingredient makes the dish!!!)
2 T soy sauce
1 t ginger
1 pound shrimp
carrots, thinly sliced
snap peas
1 red pepper, sliced
1/2 c green onions, chopped
cilantro, minced (handful)
salted peanuts (about 1 cup)

For the dressing, whisk the oil, honey, vinegar, sesame oil, soy sauce and ginger.

Combine pasta and all chopped veggies.   Sprinkle peanuts on top.

Pour dressing over all and mix well.  Refrigerate until serving.

This was a huge hit with the entire family – I’m sure we will have this again!!!

Tomato Shrimp Dish

This dish was super easy to make and so delicious!!!!  I love meals that come together in a short time and this one definitely fits the bill!

Tomato Shrimp (you could come up with a fancy name but I’m sticking with this!!)

  • 1 T olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, crushed
  • 1 can diced tomatoes
  • 3/4 c dry white wine
  • 2 lbs uncooked large shrimp
  • oregano to taste
  • 6 oz Feta cheese, crumbled

1.  Heat oil in dutch oven; cook onion and garlic, stirring until onion softens.  Add tomatoes & wine; bring to a boil.  Reduce heat; simmer, covered, 10 minutes, stirring occasionally.

2.  Shell & devein shrimp.

3.  Add shrimp and oregano to tomato mixture; simmer, covered, 10 minutes, stirring occasionally.

4.  Preheat broiler.

5.  Sprinkle cheese over shrimp mixture; place under broiler until cheese browns lightly.

We ate ours over orzo – Delicious!!!

Orange and Avocado Salsa with Shrimp Tacos

Tonight I wanted a light and healthy dinner after a week of travel and more junk than I normally eat.

I made shrimp tacos with a fruit salsa – orange and avocado salsa.  It was a super easy meal to prep and very delicious!!!!

Orange and Avocado Salsa

  • 1 can mandarin oranges, drained
  • about 1/4 c red onion, chopped
  • 3 avocados, chopped (mine were on the small side – if you have bigger avocados you might not want 3)
  • cilantro to taste, chopped

Mix all ingredients.

This is a great summer meal – less than 20 minutes to the table, no oven required!!!
