Super Easy Chicken Soft Tacos

Even in a funk, I still have to feed my family!

Thankfully, I love my crock pot and can just throw a few ingredients inside and call it dinner!!!

Yesterday (after a 4:00 am wake-up to clean the venue), I really needed a simple dinner that didn’t require much effort.  And, the best part???  This is actually a healthy meal!!!

Ingredients:
chicken (I used about 6 chicken breasts – frozen)
1 can diced tomatoes (you could easily use the spicy kind!!)
1 packet taco seasoning (or make your own if that’s your thing!)

Put the chicken in the crock pot.

Mix tomatoes and taco seasoning together.

Pour tomato mixture over chicken and cook on low about 8 hours.

Before serving, shred the chicken.

You can add whatever taco fixings you like.  Last night we kept it simple (that’s what happens when mom’s in a funk) and just had some rice, shredded lettuce and cheese.

Crock Pot Mexican Pork

Yesterday did not feel like spring!  It was right under the  freezing point most of the day and it snowed all afternoon.  

I decided that something warm and hearty would be a perfect dinner!!!

Plus, anytime I can make dinner at 8:00 am and not have to worry about it the rest of the day I’m happy!!!

I used my Ninja for this easy dinner.

Ingredients:
pork roast (mine was right at 5 pounds)
2 packets taco seasoning (feel free to make your own – I went the easy route!)
1 can of green chilies
minced garlic (I used about a tablespoon)
chopped onion (I used 1/2 of a large onion)
1 c water
1 can diced tomatoes

Directions:
Put pork in crock pot.  (I put it in frozen.)  Mix all of the other ingredients and pour over the pork.  Cook on low about 10 hours.  

Shred the meat the last hour or so of cooking –

I served this over rice.

You could also eat this in a tortilla with sour cream and cheese which is what Hunter and Chris chose to do.  Jordan enjoyed his over rice like me.  

Besides being a simple dish, this is nice because it makes PLENTY!!!  We love left-overs around here!!!

Crock Pot White Chicken Chili

I love chili – all types!!!  I really like white chicken chili!  And, if it can be made in the crock pot then it is a definite winner in my book!!!

This recipe is super easy and delicious!!  I’ve made it 2 different times and both times it has been a meal that we end up scraping all of it out of the crock pot!!!

White Chicken Chili

  • about 1/2 onion, chopped
  • 1 – 2  T vegetable oil
  • garlic – I did about a spoonful
  • chicken – I always used diced, cooked chicken breast

  • 1 can Great Northern beans
  • 1 can green chilies
  • jalapeño, if desired – I used some from a can – about 2 spoonfuls
  • 2.5-3 c chicken broth
  • Oregano – I just shook some in about 1-2 t
  • cumin – again I just shook some in
  • salt, to tast
  • sour cream or plain yogurt – about 3 spoonfuls (I always use fat-free of either of these but you can use whatever style you choose!!)
  • shredded cheese, 1.5-2 c

Saute the onion in the oil until tender.  Because I used my Ninja crock pot, I just did this right in the crock pot (no extra dishes to wash!!).

Add the garlic, chicken, beans, green chills, jalapeño, oregano, cumin, salt and chicken broth.

Cook on low 4-6 hours.  

30 minutes before serving add sour cream or yogurt and cheese.

Heat through (about 20-30 minutes).

Serve and enjoy!!

The creaminess of this chili and the tiny bit of heat from the peppers make it the perfect winter dish!!!

Crock Pot Taco Soup

I love soup!!  It is easy to make, filling and the possibilities are endless!!  Taco soup is one of my favorites – pretty much anything goes when making taco soup.

For tonight’s soup (crazy that April 10 it is only in the mid 30s) I used my crock pot.Crock PotAnytime I can use my crock pot I’m happy!!  I put this together and then spent the afternoon volunteering at Hunter’s school (library).

Taco Soup

  • 2 pounds ground beef (you could use ground turkey if you prefer)
  • onion, chopped
  • 2 cans diced tomatoes
  • can of kidney beans
  • can of pinto beans
  • can of green chilies
  • can of tomato sauce
  • package of dry ranch salad dressing
  • package of taco seasoning
  • frozen corn (amount is up to you)

Brown the meat and onion.Taco Soup

Mix everything in crock pot and set on low for several hours (today I set it for 5 hours).Taco Soup

Serve with whatever toppings you like – sour cream, avocados, cheese)

Chicken & Rice Gumbo Soup

I have never made Gumbo before but I thought it would be fun to try some!  Cold and snowy outside – warm, filling soup inside!!!

I looked at lots of recipes and then sort-of combined and deleted the things that we like/don’t care for!

Chicken & Rice Gumbo Soup

  • diced, chicken breasts (I use the precut, precooked bags – cause I’m all about convenience!)
  • package of smoked sausage, sliced
  • 4 carrot sticks, chopped
  • 1/2 onion, chopped
  • 1 can stewed tomatoes
  • 1 can diced tomatoes
  • 4 soup cans water
  • 2 T chicken bouillon granules
  • dried thyme (I just shook some in)
  • 1 package frozen cut okra
  • hot cooked rice (I made 3 cups in the rice cooker)

Mix all ingredients except okra and rice in crock pot.

Cover and cook on low 7 hours(ish).Gumbo

Stir in okra during the last hour.  (I just dumped the frozen stuff right in!)

Spoon rice into bowl and top with gumbo.  If you want it spicy, by all means add hot sauce.  (We did not.)  I toasted up some French bread so we would have a crusty bread to dip into the soup – so good!!!Chicken & Rice Gumbo Soup
