I am a 44 year old wife, mom and athlete. I started running in high school and have loved it ever since. As I got older, I had to stop running every day so I added in weight training and all sorts of fun work-outs like Insanity, P90X and Turbo Fire. I'm a certified personal trainer and I love all aspects of fitness.

Roast Chicken with Lemon and Herbs

  • 1 chicken, about 3 pounds
  • 1 lemon, halved
  • thyme
  • rosemary
  • bay leaf
  • minced garlic
  • 2 T butter, softened
  • chicken stock
  • salt & pepper

Start by brining your chicken – it’s a little extra work but so worth it when you are biting into moist, white chicken meat!!!!  I just put my chicken in a large bowl and mixed about 3/4 c salt with cold water.  Cover the chicken with water.  Put bowl in refrigerator. Today I only had it in the brine about 3 or 4 hours.   Make sure you rinse the chicken REALLY well before you cook so that it isn’t a just salt block!!!!

Preheat oven to 400. (I used an electric roaster – but you still preheat!)   Season the chicken with salt & pepper.  In a small bowl, mix the juice of half the lemon, thyme, rosemary and garlic.  Place the bay leaf and the lemon half inside the chicken.  Pour juice mixture into the cavity.  Rub 1 T of the butter all over the chicken.  Squeeze other half of lemon juice on top.  Put lemon half and 2nd T of butter inside chicken.  Pour a little chicken stock over bird.

Roast until temperature of chicken is at least 165 (some people say 180 – your call) and the juices of the chicken run clear.  Let chicken rest about 10-15 minutes before carving.

Bonus Hour – Awesome!!

I like the fall  time change because I love the extra hour to sleep! I’m sure tonight at dinner when it is already dark I will have other thoughts!  Oh well – I’m just happy it is sunny and fairly warm today!!

This morning I realized that it has been awhile since I did some type of push-up for my 43 so I decided to do something about that!! I put a medicine ball under my feet

and did my push-ups, all 43of them!!!  Here is a lovely shot of the down part of the push-up:

They were tough!!  I’m pretty sure my face was bright red but I eeked out all 43!

After the push-ups I ran.  10 miles in 63:48 – WooHoo!!!

Yesterday, Chris was the MC for a friend’s retirement from the Guard.  I had to get a couple of pictures because as much as I love him in his flight suit, I love to see him all dressed up!!!

Duck Dynasty Delight

I think I might have a new favorite show – Duck Dynasty!!!  Last night, Jordan and I watched some of the old episodes and laughed ourselves silly!  This morning I read a friend’s facebook status about the cast and learned how truly down-to-earth the family really is.  Plus they have a great message to share!

Si’s Tea Party (I loved this episode!!!)

I decided that my 43 today should have something to do with ducks – doesn’t everyone choose exercises based on TV shows?!  So…I duck-walked!!!! I did 10 duck-steps for each rep so a total of 430 duck-walk steps to achieve my 43!  I’m sure my quads will really thank me later – they were screaming by about #10!

Other than the 43, today is my off day so now it’s just time to get caught up around the house (and maybe watch a couple more episodes of Duck Dynasty with the boys!!!!).

Butt Burner in the Basement

The early morning 43 + work-out really isn’t my favorite until it’s done!  I love the fact that it is 7:00 and I have already worked out hard and gotten ready for my day!!!

Today I did a complete butt burner for my 43.  Start in tabletop position (all 4s) and lift right knee to side.  Push right foot straight back then bring extended leg around to side.  Bend knee back to first position and lower.  Confused? Check out the cool video!!  😉

I did 43 on my right side and then switched and did 43 on the left side.  The 2nd side was much harder – I guess because that half of my butt had already supported all of my weight during the first set!!!

After I set my butt on fire, I did my work-out.  Today I started the Push Circuit part of Chalean Extreme (Beach Body).  I’m excited to see how much I can increase my strength this time through the program!!!

Another day that I get to spend in the gym with the kids!!!  This PE subbing is a pretty good gig – I get to wear work-out stuff and tennis shoes all day!

Physical Education

Another day, another 43!!!  Today was a short one.  :Happy:

I stood in a T position (arms extended out to sides)

Hunter – arms extended for bicep curls

(Hunter still can’t fully extend his left arm – after breaking his wrist in July.) and then did bicep curls like this:

I used 8 pound dumbbells and the last 4-5 were a struggle for sure!!!  Happy I made it to 43!!!

I didn’t have a lot of time to work-out so I just ran a quick 5 miles (29:19) and did 1.25 miles at a nice easy pace to recover.

Today and tomorrow I get to spend my day in the gym teaching PE!!!!  I am sooo excited!!  Way, way back I started my college career as a PE major before I switched to being a Chemistry/Biology major with a PE minor.  I taught science (at the middle school level) BC but I also was a coach for years.  I’m looking forward to spending 2 whole days in the gym with my whistle!!!!
