White Chicken Chili

Today was cold!!! (not as cold as those really northern states but I’m a Texas girl living in Kansas!)  Between the cold, my sore throat and Hunter’s new braces – soup of some sort was on the menu!!!  This “chili” was perfect!!!

  • 2 T olive oil
  • 1 package diced, cooked chicken breasts (we get this at Dillons)
  • 1/2 c onion chopped
  • 1 spoonful minced garlic (I’m lazy and buy it in the jar!)
  • 2 cans chicken broth
  • 1 red bell pepper, chopped
  • 1-2 t chili powder
  • 1 t ground cumin
  • 1/4 t salt
  • 1 can Great Northern beans (I never rinse or drain my beans!)
  • 1 can chopped green chilies
  • 1 small carton fat-free Greek yogurt
  • 1/4 c chopped cilantro (or to taste – I love cilantro)

In Dutch oven, heat oil over medium heat.  Stir in chicken (mine was still frozen), onions and garlic.  Add remaining ingredients except yogurt and cilantro.  Mix and let simmer (I let mine simmer about 1 hour –  I think soup or chili can never simmer too long!!!).  Turn off heat and stir in yogurt and cilantro.

Homemade Chicken Noodle Soup for my Sick Boy

Jordan is sick -BOO!!!  He is like me and rarely ever sick – probably 3 years since the last time he was sick!!!  He has a terrible sore throat (yeah for texting so he doesn’t have to talk!!!), cough and low grade fever – I hope it doesn’t turn into the flu!!!

I made him chicken noodle soup tonight to soothe his throat and speed the recovery!!  I hope it helps!

This is the first time I have ever made homemade chicken noodle soup – who knew it was so easy?????

Chicken Noodle Soup for the Sick

  • 1/2 c onions
  • 2 T butter
  • about 1 1/2 lb diced, cooked chicken breast
  • 6 cups chicken broth
  • dried basil – I just sprinkled it in
  • dried oregano – I just sprinkled it in
  • 2-3 c uncooked egg noodles (I used the smallest size)

Saute onions in butter until tender.  Add everything but the noodles and simmer for about 30 minutes.  Add the noodles and simmer 20-30 minutes until noodles are cooked.

Eat and get well!!!

Caprese Chicken Pasta

This meal is probably more of a summer time meal but it was really good last night!!

  • 16 oz fresh mozzarella cheese, cut into small pieces
  • 8-9 T olive oil
  • spoonful of minced garlic
  • salt & pepper
  • angel hair pasta
  • 2 pounds cooked, diced chicken
  • fresh basil
  • 2 large tomatoes, chopped

In a large bowl, combine the cheese, oil, garlic, salt & pepper.  Let stand at room temperature for about an hour.

Cook pasta according to package directions; drain and return to pot.  Stir in chicken, tomatoes, cheese and basil until heated.

Stuffed Mushrooms

I used to think that making stuffed mushrooms was only for “fancy” cooks!!  Who knew they were so easy to make?!

  • 1 package cream cheese, softened (I use 1/3 fat)
  • 1 package bacon bits
  • chopped green onion (your preference on amount)
  • garlic powder
  • 1 lb whole fresh mushrooms

Pop the stems out of the mushrooms.  Clean the mushrooms set on oven proof platter.  Mix the cream cheese, bacon, onion and garlic.  Fill each mushroom.

Broil for about 4-6 minutes (till cheese begins to brown).

Black Bean Avocado Salsa

This is one of my all-time favorites!  I have  taken it  to more functions than I can count!!!  (Plus, it is actually pretty healthy if you don’t eat too many of  the tortilla chips with it!!)

  • frozen corn (about 16 oz) – I never thaw it in advance
  • 2 cans sliced ripe olives, drained
  • 1 (or 2 depending on your preference!) can black beans, drained
  • 1 red bell pepper, chopped
  • 1 small onion, chopped
  • minced garlic (your preference)
  • 1/3 c olive oil
  • 1/4 c lemon juice
  • 3 T cider vinegar
  • 1 t dried oregano
  • little salt & pepper
  • 4 (or more!) medium ripe avocados
  • Tortilla chips

Combine corn, olives, beans, red pepper and onion in a large bowl.  Mix garlic, oil, lemon juice, vinegar, oregano, salt  and pepper in a small bowl.  Pour over corn mixture and stir well.  Cover and refrigerate.  Just before serving, chop avocados and stir into salsa.
